When I’m in a bright, sunny mood, a fresh Greek salad is exactly what I crave. The crisp vegetables and tangy feta just make me feel vibrant and happy. It’s like a burst of sunshine on a plate!

Fresh Greek Salad

Ingredients

  • 2 ripe tomatoes, chopped
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 4 oz feta cheese, crumbled or cubed
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Dried oregano, salt, and pepper to taste

Steps

  1. Combine chopped tomatoes, cucumber, red onion, and Kalamata olives in a large bowl.
  2. Add feta cheese to the vegetables.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over the salad and toss gently to combine. Serve immediately.
