To feel balanced and grounded, I often make a stir-fry with plenty of fresh vegetables and tofu. It’s light, nutritious, and always satisfying.

Easy Tofu and Veggie Stir-fry

Ingredients

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 1 tbsp sesame oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1/4 cup soy sauce
  • 1 tbsp cornstarch
  • Cooked rice for serving

Steps

  1. Heat sesame oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden brown on all sides. Remove from pan.
  2. Add bell pepper and broccoli to the same pan. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  3. In a small bowl, whisk together soy sauce and cornstarch. Pour sauce over vegetables and stir until it thickens.
  4. Return tofu to the pan and toss to coat. Serve immediately over cooked rice.
