When I’m feeling a bit homesick, a good old plate of fish and chips instantly transports me back to the Emerald Isle. It’s a taste of home that always makes me smile.
Crispy Baked Fish and Chips
Ingredients
- 2 large russet potatoes, cut into thick fries
- 2 fillets of cod or haddock (about 6 oz each)
- 1/2 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Lemon wedges for serving
Steps
- Preheat oven to 425°F (220°C). Toss potato fries with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and bake for 20-25 minutes, flipping halfway, until golden and crisp.
- While fries bake, mix flour, paprika, salt, and pepper in a shallow dish. Dredge fish fillets in the flour mixture, shaking off excess.
- Place fish on a separate baking sheet, drizzle with remaining 1 tablespoon olive oil. Bake for 12-15 minutes, or until fish is flaky and cooked through.
- Serve fish and chips hot with lemon wedges and your favorite sauces.
