When I’m feeling adventurous and craving a kick, nothing beats authentic Jamaican Jerk Chicken. It’s a fiery explosion of flavor that transports me straight to the Caribbean.

Spicy Island Jerk Chicken

1 hour 15 mins (plus marinating) • Medium

Ingredients

  • 2 lbs chicken thighs or drumsticks
  • 1/4 cup jerk seasoning paste
  • 2 tbsp olive oil
  • 1 lime, juiced
  • 1/2 tsp salt
  • Rice and peas for serving

Steps

  1. Marinate chicken with jerk seasoning, olive oil, lime juice, and salt for at least 2 hours (preferably overnight).
  2. Preheat oven to 400°F (200°C).
  3. Roast chicken for 45-55 minutes, or until cooked through and skin is crispy.
  4. Alternatively, grill over medium heat, turning occasionally, until cooked.
  5. Serve with rice and peas.
