Sometimes you just need to treat yourself, and for me, that’s a perfectly caramelized crème brûlée. It feels so luxurious and special.

Classic Crème Brûlée

70 minutes • Medium

Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 5 large egg yolks
  • Extra sugar for caramelizing

Steps

  1. Preheat oven to 325°F (160°C). Heat cream, 1/2 cup sugar, and vanilla until simmering.
  2. Whisk egg yolks separately. Slowly temper yolks with warm cream mixture.
  3. Pour custard into ramekins. Place ramekins in a baking dish and fill with hot water halfway up the sides.
  4. Bake for 30-35 minutes until edges are set but centers jiggle. Chill for at least 4 hours. Before serving, sprinkle with sugar and caramelize with a torch.
