Feeling a bit adventurous in the kitchen today! I’m trying my hand at a spicy Thai Green Curry to transport my taste buds to new places.

Vibrant Thai Green Curry with Chicken

Ingredients

  • 1 tbsp coconut oil
  • 400ml coconut milk
  • 2 tbsp green curry paste
  • 300g chicken breast, sliced
  • 1 cup mixed vegetables (e.g., bell peppers, green beans)
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • Fresh basil or cilantro for garnish

Steps

  1. Heat coconut oil in a pot, add green curry paste and cook for 1 minute until fragrant. Stir in coconut milk.
  2. Add sliced chicken and simmer until cooked through. Stir in mixed vegetables, fish sauce, and brown sugar.
  3. Cook for another 5-7 minutes until vegetables are tender-crisp. Serve hot with rice, garnished with fresh herbs.
