After a long week, a simple bowl of fresh tomato and basil pasta is my ultimate relaxation food. It’s light, flavorful, and incredibly soothing.
Simple Tomato Basil Pasta
Ingredients
- 8 oz spaghetti or linguine
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 pint cherry tomatoes, halved
- 1/2 cup fresh basil leaves, chopped
- Salt and black pepper to taste
- Parmesan cheese for serving
Steps
- Cook pasta according to package directions. Reserve 1/2 cup pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute until fragrant.
- Add cherry tomatoes and cook for 5-7 minutes until they begin to burst. Stir in cooked pasta, chopped basil, and a splash of reserved pasta water to create a light sauce.
- Season with salt and pepper. Serve immediately, topped with Parmesan cheese.
