Simple Berry Tart with Pastry Cream

2 hours (including chilling) • Medium

Ingredients

  • 1 pre-baked tart shell (9-inch)
  • 1 cup milk
  • 2 egg yolks
  • 1/4 cup sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 2 cups mixed fresh berries

Steps

  1. 1. Whisk egg yolks, sugar, and cornstarch. Heat milk until simmering, then slowly whisk into egg mixture.
  2. 2. Return mixture to saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat, stir in vanilla, and let cool completely (cover with plastic wrap touching the surface).
  3. 3. Once pastry cream is chilled, spread it evenly into the pre-baked tart shell.
  4. 4. Arrange fresh berries decoratively over the pastry cream. Chill for at least 30 minutes before serving.
