On chilly evenings, all I want is a big bowl of warm lentil soup. It’s hearty, comforting, and makes me feel so cozy and safe at home. It’s like a warm hug in a bowl.

Turkish Red Lentil Soup (Mercimek Çorbası)

Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 4 cups vegetable broth
  • 1 tbsp tomato paste
  • Mint and paprika for garnish

Steps

  1. Rinse lentils. Sauté onion and carrots in olive oil in a large pot until softened.
  2. Add lentils, broth, and tomato paste. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are very tender.
  3. Use an immersion blender to purée the soup until smooth. Season with salt and pepper.
  4. For the garnish, melt butter, add dried mint and paprika, then drizzle over individual servings.
  5. Serve hot with a squeeze of lemon.
