Turkish Red Lentil Soup (Mercimek Çorbası)
Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 2 carrots, chopped
- 4 cups vegetable broth
- 1 tbsp tomato paste
- Mint and paprika for garnish
Steps
- Rinse lentils. Sauté onion and carrots in olive oil in a large pot until softened.
- Add lentils, broth, and tomato paste. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are very tender.
- Use an immersion blender to purée the soup until smooth. Season with salt and pepper.
- For the garnish, melt butter, add dried mint and paprika, then drizzle over individual servings.
- Serve hot with a squeeze of lemon.
