Authentic Carbonara

Ingredients

  • 8 oz spaghetti
  • 4 oz guanciale or pancetta, diced
  • 2 large eggs
  • 1/2 cup grated Pecorino Romano
  • Black pepper, freshly ground

Steps

  1. Cook spaghetti according to package directions until al dente.
  2. While pasta cooks, crisp guanciale in a pan; remove from heat.
  3. Whisk eggs, Pecorino Romano, and a generous amount of black pepper.
  4. Drain pasta, reserving some water. Toss pasta with guanciale, then quickly add egg mixture, stirring vigorously. Add pasta water as needed to create a creamy sauce.
