Whenever I’m feeling adventurous and want to try something new, I always think of tacos al pastor. The vibrant flavors always transport me, even if I’m just eating them at home!
Quick Tacos al Pastor
Ingredients
- 1 lb pork shoulder (thinly sliced)
- 1/4 cup al pastor adobo paste
- 1/2 cup chopped pineapple
- 1/4 red onion (finely chopped)
- 1/4 cup chopped cilantro
- 12 corn tortillas
- Lime wedges for serving
Steps
- Toss sliced pork with al pastor adobo paste and marinate for at least 15 minutes.
- Heat a large skillet or griddle over medium-high heat. Add pork and cook until browned and cooked through, about 8-10 minutes. Add pineapple during the last 3 minutes of cooking.
- Warm corn tortillas on a separate dry skillet or in the microwave.
- Assemble tacos with the cooked pork and pineapple mixture. Garnish with chopped red onion, cilantro, and a squeeze of lime.
