Weekend mornings always feel happier when they start with a stack of fluffy pancakes! There’s just something about them that brightens my day. It’s a simple pleasure that brings a smile to my face!

Fluffy Buttermilk Pancakes

20 minutes • Easy

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 2 tbsp melted butter

Steps

  1. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay). Do not overmix.
  4. Heat a lightly oiled griddle or non-stick pan over medium heat. Pour 1/4 cup of batter per pancake.
  5. Cook for 2-3 minutes per side, or until golden brown and cooked through. Serve immediately with your favorite toppings.
