After a really draining day, the thought of crispy fish and chips is the only thing that gets me through. It’s simple, satisfying, and exactly what I need to feel human again.

Sam's Weekend Fish and Chips

Ingredients

  • 2 cod fillets
  • 1 cup all-purpose flour
  • 1 cup cold beer
  • 1 tsp baking powder
  • Potatoes for chips
  • Vegetable oil for frying

Steps

  1. Cut potatoes into chip-sized pieces. Fry in oil at 325F (160C) until soft, then remove. Increase oil temp to 375F (190C).
  2. Whisk together flour, beer, and baking powder for batter. Pat fish dry and dip into batter.
  3. Fry fish in hot oil for 5-7 minutes until golden brown and cooked through.
  4. Return chips to hot oil and fry until crispy and golden.
  5. Serve immediately with salt and vinegar.
