Authentic Chicken Pad Thai
Ingredients
- 8 oz flat rice noodles
- 1 tbsp oil
- 2 boneless, skinless chicken thighs, sliced
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 1 cup bean sprouts
- 1/2 cup chopped peanuts
- 2 tbsp fish sauce
- 1 tbsp tamarind paste
- 1 tbsp brown sugar
- Lime wedges for serving
Steps
- Soak rice noodles in hot water for 15-20 minutes until pliable but still firm. Drain.
- Heat oil in a large wok or skillet. Add chicken and cook until browned. Add garlic and cook for 1 minute. Push chicken to one side.
- Pour beaten eggs into the empty side of the wok and scramble. Add noodles, bean sprouts, fish sauce, tamarind paste, and brown sugar. Toss everything together and cook for 5-7 minutes until noodles are tender.
- Serve hot, garnished with chopped peanuts and fresh lime wedges.
