Classic Beef & Rice Stuffed Peppers
Ingredients
- 4 large bell peppers, halved
- 1 lb ground beef
- 1 cup cooked rice
- 1 can (14.5oz) diced tomatoes, undrained
- 0.5 cup shredded cheese
- 1 onion, chopped
- Salt, pepper, garlic powder
Steps
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Brown ground beef and onion in a skillet; drain fat. Stir in cooked rice, diced tomatoes, salt, pepper, and garlic powder.
- Place bell pepper halves in the baking dish. Fill each half with the beef and rice mixture. Top with shredded cheese.
- Bake for 30-40 minutes, or until peppers are tender and cheese is melted and bubbly.
