When I’m truly hungry and need a substantial meal, feijoada is my absolute go-to. It’s rich, flavorful, and makes me feel completely satisfied.
Hearty Brazilian Feijoada
Ingredients
- 1 cup black beans, soaked overnight
- 1 lb smoked sausage, sliced
- 1/2 lb pork ribs, cut into pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bay leaf
- Water or beef broth
- Cooked rice for serving
Steps
- Drain soaked beans. In a large pot, combine beans, sausage, pork ribs, onion, garlic, bay leaf, and enough water/broth to cover.
- Bring to a boil, then reduce heat and simmer for 1.5-2 hours, or until beans and meats are tender. Stir occasionally.
- Remove some beans and mash them, then return to the pot to thicken the stew. Adjust seasoning.
- Serve hot with white rice.
