Quick Feijoada

Ingredients

  • 1 can (15oz) black beans, undrained
  • 1 lb smoked sausage, sliced
  • 4 strips bacon, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • Cooked white rice for serving

Steps

  1. Cook diced bacon in a large pot until crispy; remove bacon and set aside.
  2. Add sliced sausage to the pot with bacon fat and cook until browned; remove sausage.
  3. Sauté chopped onion and minced garlic in the same pot until fragrant.
  4. Add black beans (with liquid), cooked sausage, and most of the bacon back to the pot; simmer for 30-40 minutes.
  5. Serve hot with white rice and garnish with remaining crispy bacon.
