After a busy week, a hearty plate of biryani leaves me feeling utterly satisfied. It’s a labor of love to make, but so worth every flavorful bite.

Chicken Biryani

Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 cup plain yogurt
  • 1/4 cup biryani masala
  • 2 large onions, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • Saffron strands (optional)

Steps

  1. Marinate chicken with yogurt, biryani masala, and a pinch of salt for at least 30 minutes.
  2. Fry sliced onions until golden brown. Cook rice until 70% done and drain.
  3. Layer marinated chicken, fried onions, and partially cooked rice in a heavy-bottomed pot. Sprinkle with cilantro and saffron.
  4. Seal the pot and cook on low heat for 45-60 minutes (
