Classic Hearty Beef Stew
Ingredients
- 2 tbsp olive oil
- 1.5 lbs beef chuck, cut into 1-inch cubes
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp all-purpose flour
- 2 sprigs fresh thyme
- Salt and black pepper to taste
Steps
- Heat olive oil in a large Dutch oven over medium-high heat. Brown beef cubes in batches; remove and set aside.
- Add onion, carrots, and celery to the pot; cook until softened, about 5-7 minutes. Stir in flour and cook for 1 minute.
- Return beef to the pot. Pour in beef broth and diced tomatoes. Add thyme sprigs, salt, and pepper. Bring to a simmer.
- Reduce heat to low, cover, and cook for 1.5 to 2 hours, or until beef is very tender. Remove thyme sprigs before serving hot.
