Hearty Egyptian Lentil Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup red lentils, rinsed
- 6 cups vegetable broth
- 1 carrot, diced
- 1 potato, diced
- 1 tsp cumin
- Salt and pepper to taste
Steps
- Heat olive oil in a large pot. Sauté onion and garlic until fragrant.
- Add rinsed lentils, broth, carrot, potato, and cumin. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils and vegetables are tender.
- Season with salt and pepper. For a smoother soup, you can blend a portion or all of it with an immersion blender.
- Serve hot, perhaps with a squeeze of lemon.
