Hearty Egyptian Lentil Soup

45 minutes • Easy

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup red lentils, rinsed
  • 6 cups vegetable broth
  • 1 carrot, diced
  • 1 potato, diced
  • 1 tsp cumin
  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large pot. Sauté onion and garlic until fragrant.
  2. Add rinsed lentils, broth, carrot, potato, and cumin. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils and vegetables are tender.
  3. Season with salt and pepper. For a smoother soup, you can blend a portion or all of it with an immersion blender.
  4. Serve hot, perhaps with a squeeze of lemon.
