After a long week, a hearty bowl of lentil soup always makes me feel completely recharged and ready for anything. It’s my grandmother’s recipe.

Egyptian Lentil Soup

45 minutes • Easy

Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 potatoes, chopped
  • 6 cups vegetable broth
  • 1 tsp cumin

Steps

  1. Rinse lentils thoroughly.
  2. Sauté onion, carrots, and potatoes in a pot until slightly softened.
  3. Add lentils, vegetable broth, and cumin. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Blend the soup until smooth, or leave chunky if preferred. Season and serve.
