Egyptian Lentil Soup
Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, chopped
- 6 cups vegetable broth
- 1 tsp cumin
Steps
- Rinse lentils thoroughly.
- Sauté onion, carrots, and potatoes in a pot until slightly softened.
- Add lentils, vegetable broth, and cumin. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Blend the soup until smooth, or leave chunky if preferred. Season and serve.
