I’m feeling so creatively inspired lately, and it’s made me want to explore new flavors in my cooking. A fragrant Moroccan tagine, with all its beautiful spices and tender ingredients, is just what I need to fuel my imagination.

Fragrant Chicken & Vegetable Tagine

Ingredients

  • Chicken thighs
  • Carrots
  • Potatoes
  • Onion
  • Ras el hanout spice blend
  • Canned diced tomatoes
  • Olives

Steps

  1. Sauté onion, then brown chicken thighs in a tagine or heavy pot.
  2. Add carrots, potatoes, Ras el hanout, and diced tomatoes.
  3. Add a little water, cover, and simmer for about an hour until chicken is tender.
  4. Stir in olives during the last 10 minutes.
  5. Serve with couscous or bread.
