Whenever I’m feeling especially grateful for my family and traditions, I love to share a big, fragrant lamb tagine. It’s a dish meant for togetherness and warmth.
Quick Chickpea and Vegetable Tagine
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15oz) chickpeas, rinsed
- 1 can (14.5oz) diced tomatoes
- 1 cup vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp ginger powder
- 1/4 tsp cayenne pepper (optional)
- 1 zucchini, diced
- 1 bell pepper, diced
- Fresh cilantro (for garnish)
Steps
- Heat olive oil in a large pot or tagine over medium heat. Sauté onion until softened, then add garlic.
- Stir in cumin, coriander, turmeric, ginger, and cayenne. Cook for 1 minute until fragrant.
- Add chickpeas, diced tomatoes, vegetable broth, zucchini, and bell pepper. Bring to a simmer.
- Cover and cook for 25-30 minutes, or until vegetables are tender.
- Garnish with fresh cilantro and serve with couscous or bread.
