Whenever I’m feeling especially grateful for my family and traditions, I love to share a big, fragrant lamb tagine. It’s a dish meant for togetherness and warmth.

Quick Chickpea and Vegetable Tagine

45 minutes • Medium

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15oz) chickpeas, rinsed
  • 1 can (14.5oz) diced tomatoes
  • 1 cup vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp ginger powder
  • 1/4 tsp cayenne pepper (optional)
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • Fresh cilantro (for garnish)

Steps

  1. Heat olive oil in a large pot or tagine over medium heat. Sauté onion until softened, then add garlic.
  2. Stir in cumin, coriander, turmeric, ginger, and cayenne. Cook for 1 minute until fragrant.
  3. Add chickpeas, diced tomatoes, vegetable broth, zucchini, and bell pepper. Bring to a simmer.
  4. Cover and cook for 25-30 minutes, or until vegetables are tender.
  5. Garnish with fresh cilantro and serve with couscous or bread.
