After a long week, there’s nothing that makes me feel more utterly content than a slow-cooked chicken tagine. The aroma fills the house and every bite is pure, blissful satisfaction.
Fragrant Chicken Tagine
Ingredients
- 2 lbs chicken pieces
- 1 onion, chopped
- 2 carrots, sliced
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup green olives
- 2 tbsp tagine spice blend (ras el hanout)
Steps
- In a tagine or heavy pot, brown chicken pieces. Remove and set aside.
- Sauté onion and carrots until softened. Add tomatoes, olives, and spice blend, cook for 2 minutes.
- Return chicken to the pot. Add 1/2 cup water, cover, and simmer on low heat for 1.5-2 hours until chicken is tender.
- Serve hot with couscous.
