After a long week, there’s nothing that makes me feel more utterly content than a slow-cooked chicken tagine. The aroma fills the house and every bite is pure, blissful satisfaction.

Fragrant Chicken Tagine

Ingredients

  • 2 lbs chicken pieces
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup green olives
  • 2 tbsp tagine spice blend (ras el hanout)

Steps

  1. In a tagine or heavy pot, brown chicken pieces. Remove and set aside.
  2. Sauté onion and carrots until softened. Add tomatoes, olives, and spice blend, cook for 2 minutes.
  3. Return chicken to the pot. Add 1/2 cup water, cover, and simmer on low heat for 1.5-2 hours until chicken is tender.
  4. Serve hot with couscous.
