There’s nothing quite as comforting as a warm bowl of tomato soup with a perfectly gooey grilled cheese. It’s my go-to when I want to feel perfectly cozy and loved.

Classic Grilled Cheese & Tomato Soup

20 minutes • Easy

Ingredients

  • 2 slices bread
  • 2 slices cheddar cheese
  • 1 tbsp butter
  • 1 can (14.5 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Steps

  1. For soup: Combine crushed tomatoes and vegetable broth in a saucepan. Bring to a simmer, then reduce heat and let cook for 10 minutes. Stir in heavy cream, season with salt and pepper.
  2. For grilled cheese: Butter one side of each bread slice. Place one slice butter-side down in a hot skillet. Top with cheese, then the second slice of bread (butter-side up).
  3. Cook over medium heat for 3-4 minutes per side, until golden brown and cheese is melted and bubbly. Serve immediately with hot tomato soup.
