Simple Chickpea & Spinach Curry

30 minutes • Easy

Ingredients

  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can (15oz) chickpeas, rinsed
  • 1 can (14oz) diced tomatoes
  • 1 can (14oz) coconut milk
  • 2 cups fresh spinach
  • 1 tbsp curry powder
  • Rice for serving

Steps

  1. Heat coconut oil in a large pot. Sauté onion until softened, then add garlic, ginger, and curry powder. Cook for 1 minute until fragrant.
  2. Stir in chickpeas, diced tomatoes, and coconut milk. Bring to a simmer and cook for 15-20 minutes, allowing flavors to meld.
  3. Stir in fresh spinach and cook until wilted. Serve hot with rice.
