Simple Chickpea & Spinach Curry
Ingredients
- 1 tbsp coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (15oz) chickpeas, rinsed
- 1 can (14oz) diced tomatoes
- 1 can (14oz) coconut milk
- 2 cups fresh spinach
- 1 tbsp curry powder
- Rice for serving
Steps
- Heat coconut oil in a large pot. Sauté onion until softened, then add garlic, ginger, and curry powder. Cook for 1 minute until fragrant.
- Stir in chickpeas, diced tomatoes, and coconut milk. Bring to a simmer and cook for 15-20 minutes, allowing flavors to meld.
- Stir in fresh spinach and cook until wilted. Serve hot with rice.
