Oliver's Classic Poutine

Ingredients

  • 3 large potatoes, for fries
  • 1 cup cheese curds
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups beef broth
  • Salt and pepper

Steps

  1. Cut potatoes into fries and cook until golden and crispy (deep-fry or bake).
  2. In a saucepan, melt butter. Whisk in flour and cook for 1 minute.
  3. Gradually whisk in beef broth. Simmer, stirring, until gravy thickens. Season with salt and pepper.
  4. Place hot fries in a bowl, top with cheese curds, and pour hot gravy over them.
  5. Serve immediately while cheese curds are melting.
