Honestly, if I’m having a grumpy day, nothing can turn it around quite like a grilled cheese sandwich with a warm bowl of tomato soup. It’s my ultimate pick-me-up.

Classic Grilled Cheese & Tomato Soup

20 minutes • Easy

Ingredients

  • 4 slices bread (e.g., sourdough or white)
  • 4 slices cheese (cheddar or provolone)
  • 2 tbsp unsalted butter
  • 1 (10.75-oz) can condensed tomato soup
  • 1/2 cup milk or water
  • Salt and pepper to taste

Steps

  1. Butter one side of each bread slice. Place two slices butter-side down in a skillet over medium heat.
  2. Top each with two slices of cheese, then cover with the remaining bread slices, butter-side up.
  3. Cook for 3-5 minutes per side, until bread is golden brown and cheese is melted and bubbly. While grilling, heat tomato soup with milk/water in a saucepan, seasoning with salt and pepper.
  4. Serve grilled cheese immediately with hot tomato soup for dipping.
