There’s nothing that makes me feel more utterly content than a perfectly roasted chicken filling the house with its aroma. It’s a simple pleasure that always brings a smile.
Simple Herb Roasted Chicken
Ingredients
- 1 whole chicken (3-4 lbs)
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 1 lemon, halved
Steps
- 1. Preheat oven to 400°F (200°C). Pat chicken dry with paper towels.
- 2. In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper. Rub this mixture all over the chicken, including under the skin.
- 3. Place lemon halves inside the chicken cavity. Place chicken in a roasting pan.
- 4. Roast for 1 hour to 1 hour 20 minutes, or until internal temperature reaches 165°F (74°C). Let rest 10 minutes before carving.
