There’s nothing that makes me feel more utterly content than a perfectly roasted chicken filling the house with its aroma. It’s a simple pleasure that always brings a smile.

Simple Herb Roasted Chicken

1 hour 30 minutes • Easy

Ingredients

  • 1 whole chicken (3-4 lbs)
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 lemon, halved

Steps

  1. 1. Preheat oven to 400°F (200°C). Pat chicken dry with paper towels.
  2. 2. In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper. Rub this mixture all over the chicken, including under the skin.
  3. 3. Place lemon halves inside the chicken cavity. Place chicken in a roasting pan.
  4. 4. Roast for 1 hour to 1 hour 20 minutes, or until internal temperature reaches 165°F (74°C). Let rest 10 minutes before carving.
