Simple Jollof Rice
Ingredients
- 2 tbsp vegetable oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can (14.5 oz) crushed tomatoes
- 1/2 cup tomato paste
- 3 cups long-grain parboiled rice
- 4 cups chicken or vegetable broth
- 1 tbsp curry powder
- 1 tsp thyme
- Scotch bonnet pepper (optional)
Steps
- Heat oil, sauté onion and bell pepper until soft.
- Add crushed tomatoes, tomato paste, curry powder, and thyme; cook 10 min.
- Stir in parboiled rice and broth. Add whole Scotch bonnet if using.
- Bring to boil, reduce heat, cover tightly, and simmer 25-30 min until liquid absorbed.
- Fluff with a fork and serve.
