Living abroad, I sometimes get a pang of homesickness. When that happens, I make a big shepherd’s pie – it tastes just like my mum’s and brings a piece of home to me.

Hearty Shepherd's Pie

60 minutes • Medium

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground lamb or beef
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 cup frozen peas
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 lbs potatoes, peeled and quartered
  • 1/2 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste

Steps

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in a large skillet. Brown lamb/beef. Drain fat. Add onion, carrot, peas; cook until tender.
  3. Stir in broth, tomato paste, thyme. Simmer for 10 minutes. Transfer to a baking dish.
  4. Boil potatoes until tender. Mash with milk, butter, salt, and pepper.
  5. Spread mashed potatoes over meat mixture. Bake for 25-30 minutes, or until golden brown.
