Herbed Garlic Roasted Vegetables
Ingredients
- 1 lb mixed root vegetables (carrots, potatoes, parsnips), chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried mixed herbs (rosemary, thyme)
- Salt and pepper
Steps
- Preheat oven to 400°F (200°C).
- In a large bowl, toss chopped vegetables and bell pepper with olive oil, minced garlic, dried herbs, salt, and pepper until evenly coated.
- Spread vegetables in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.
