Herbed Garlic Roasted Vegetables

Ingredients

  • 1 lb mixed root vegetables (carrots, potatoes, parsnips), chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried mixed herbs (rosemary, thyme)
  • Salt and pepper

Steps

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chopped vegetables and bell pepper with olive oil, minced garlic, dried herbs, salt, and pepper until evenly coated.
  3. Spread vegetables in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.
