On a cold, rainy day, nothing makes me feel cozier than a bowl of creamy tomato soup with a perfectly grilled cheese sandwich. It’s pure childhood comfort in a meal.

Creamy Tomato Soup & Grilled Cheese

Ingredients

  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Bread slices (e.g., sourdough or white)
  • Cheese slices (e.g., cheddar, provolone)
  • Butter for grilling

Steps

  1. Heat olive oil in a pot. Sauté onion until softened, then add garlic and cook for 1 minute.
  2. Stir in crushed tomatoes and vegetable broth. Bring to a simmer and cook for 15 minutes.
  3. Remove from heat. Blend soup until smooth using an immersion blender or standard blender (carefully). Stir in heavy cream, season with salt and pepper.
  4. Butter one side of each bread slice. Place cheese between two unbuttered sides. Grill in a pan over medium heat until golden brown and cheese is melted.
