I’m always curious to try new foods, and homemade falafel was a revelation! The crispy outside and tender inside are just irresistible, and it’s surprisingly fun to make.

Homemade Falafel

30 minutes (plus soaking time) • Medium

Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley
  • 1 tsp ground cumin
  • 1/2 tsp baking soda
  • Salt and pepper to taste
  • Vegetable oil for frying

Steps

  1. Drain soaked chickpeas. Combine chickpeas, onion, garlic, parsley, cumin, baking soda, salt, and pepper in a food processor. Pulse until finely chopped but not a paste.
  2. Form mixture into small balls or patties.
  3. Heat about 2 inches of oil in a deep pot to 350°F (175°C).
  4. Fry falafel in batches for 3-5 minutes, turning occasionally, until golden brown and cooked through. Drain on paper towels. Serve hot.
