Hearty Red Lentil Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup red lentils, rinsed
- 6 cups vegetable broth
- 1 tsp cumin
- Juice of 1/2 lemon
- Fresh parsley for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add onion and carrots, cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
- Stir in rinsed lentils, vegetable broth, and cumin. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until lentils are tender.
- Remove from heat, stir in lemon juice. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
