Fresh Vegetable Spring Rolls with Peanut Dipping Sauce

Ingredients

  • 8-10 round rice paper wrappers
  • 1 cup cooked vermicelli noodles
  • 1 large carrot, julienned
  • 1/2 cucumber, julienned
  • 1 cup shredded lettuce
  • 1/2 cup fresh mint leaves
  • 1/4 cup chopped peanuts
  • Dipping Sauce: 1/4 cup peanut butter, 2 tbsp hoisin sauce, 1 tbsp lime juice, 1 tbsp water

Steps

  1. Prepare all vegetables, noodles, and mint. Mix dipping sauce ingredients until smooth, adding more water if too thick.
  2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for 15-20 seconds until pliable. Lay flat on a clean surface.
  3. Arrange a small amount of lettuce, noodles, carrot, cucumber, and mint near the bottom edge of the wrapper. Fold the bottom edge over the filling.
  4. Fold in the sides, then roll tightly from the bottom to the top, creating a neat roll. Repeat with remaining wrappers. Serve immediately with peanut dipping sauce.
