Maya's Aromatic Green Curry

Ingredients

  • 1 lb chicken or tofu, sliced
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp green curry paste
  • 1 cup mixed vegetables
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • Fresh basil

Steps

  1. Heat a splash of oil in a pot. Add green curry paste and cook for 1 minute until fragrant.
  2. Stir in coconut milk, fish sauce, and brown sugar. Bring to a gentle simmer.
  3. Add chicken or tofu and cook until nearly done. Add mixed vegetables.
  4. Simmer until vegetables are tender-crisp and chicken is cooked through.
  5. Stir in fresh basil just before serving with rice.
