Maya's Aromatic Green Curry
Ingredients
- 1 lb chicken or tofu, sliced
- 1 can (13.5 oz) coconut milk
- 2 tbsp green curry paste
- 1 cup mixed vegetables
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- Fresh basil
Steps
- Heat a splash of oil in a pot. Add green curry paste and cook for 1 minute until fragrant.
- Stir in coconut milk, fish sauce, and brown sugar. Bring to a gentle simmer.
- Add chicken or tofu and cook until nearly done. Add mixed vegetables.
- Simmer until vegetables are tender-crisp and chicken is cooked through.
- Stir in fresh basil just before serving with rice.
