When I’m feeling inspired and want to try something vibrant and full of life, I always gravitate towards falafel. The fresh herbs and spices always spark my creativity!

Easy Homemade Falafel

Ingredients

  • 1 (15-oz) can chickpeas (drained, rinsed)
  • 1/2 small onion (chopped)
  • 2 cloves garlic
  • 1/2 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1 tsp cumin
  • 1 tsp coriander
  • 2 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • Vegetable oil for frying

Steps

  1. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, and coriander. Pulse until coarsely chopped.
  2. Add flour and baking powder, pulse until just combined. Do not overmix. Form into small patties or balls.
  3. Heat about 1 inch of oil in a skillet over medium-high heat. Fry falafel for 3-5 minutes per side, until golden brown and cooked through.
  4. Remove with a slotted spoon and drain on paper towels. Serve hot in pita bread with tahini sauce.
