Authentic Carbonara
Ingredients
- 8 oz spaghetti
- 4 oz guanciale or pancetta, diced
- 2 large eggs
- 1/2 cup grated Pecorino Romano
- Freshly ground black pepper
Steps
- Cook spaghetti according to package directions. Reserve 1/2 cup pasta water.
- While pasta cooks, crisp guanciale/pancetta in a pan over medium heat until golden. Remove from heat.
- In a bowl, whisk eggs with Pecorino Romano and plenty of black pepper.
- Drain pasta and immediately add to the pan with guanciale. Pour egg mixture over pasta, tossing quickly while adding a splash of reserved pasta water until creamy. Serve immediately.
