Authentic Carbonara

Ingredients

  • 8 oz spaghetti
  • 4 oz guanciale or pancetta, diced
  • 2 large eggs
  • 1/2 cup grated Pecorino Romano
  • Freshly ground black pepper

Steps

  1. Cook spaghetti according to package directions. Reserve 1/2 cup pasta water.
  2. While pasta cooks, crisp guanciale/pancetta in a pan over medium heat until golden. Remove from heat.
  3. In a bowl, whisk eggs with Pecorino Romano and plenty of black pepper.
  4. Drain pasta and immediately add to the pan with guanciale. Pour egg mixture over pasta, tossing quickly while adding a splash of reserved pasta water until creamy. Serve immediately.
