Simple California Rolls

Ingredients

  • 2 cups sushi rice (cooked and seasoned)
  • 4 sheets nori seaweed
  • 1 cucumber (julienned)
  • 1 avocado (sliced)
  • 4 imitation crab sticks (halved lengthwise)
  • Soy sauce, wasabi, and pickled ginger for serving

Steps

  1. Place a sheet of nori on a bamboo rolling mat, shiny side down. Spread about 1/2 cup of seasoned sushi rice evenly over the nori, leaving a 1/2 inch border at the top.
  2. Arrange cucumber, avocado, and crab sticks horizontally across the bottom third of the rice.
  3. Carefully roll the mat tightly from the bottom, pressing gently to form a cylinder. Moisten the top edge of the nori with a little water to seal.
  4. Using a sharp, wet knife, slice the roll into 6-8 pieces. Repeat with remaining ingredients.
  5. Serve immediately with soy sauce, wasabi, and pickled ginger.
