Sometimes, when I’m feeling a little homesick, I just crave my abuela’s arroz con leche. It brings me right back to her kitchen in Spain, every time.

Classic Arroz con Leche

45 minutes • Easy

Ingredients

  • 1 cup white rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1 cinnamon stick
  • Peel of 1 lemon
  • 1 tsp vanilla extract

Steps

  1. Rinse the rice thoroughly.
  2. Combine rice, milk, cinnamon stick, and lemon peel in a saucepan and bring to a gentle simmer.
  3. Cook over low heat, stirring occasionally, until rice is tender and milk has thickened (about 30-35 minutes).
  4. Stir in sugar and vanilla extract. Remove cinnamon stick and lemon peel before serving warm or chilled.
