When I’m feeling a bit down or miss my abuela, nothing brings me back like a warm bowl of arroz con leche. It’s pure comfort in a spoonful, just like she used to make.

Abuela's Simple Arroz con Leche

Ingredients

  • 1 cup short-grain rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1 lemon peel strip
  • 1 cinnamon stick
  • Pinch of ground cinnamon for garnish

Steps

  1. Rinse rice under cold water.
  2. Combine rice, milk, sugar, lemon peel, and cinnamon stick in a saucepan. Bring to a boil, then reduce heat to low.
  3. Simmer uncovered for 30-40 minutes, stirring occasionally, until rice is tender and mixture has thickened.
  4. Remove lemon peel and cinnamon stick. Serve warm or chilled, garnished with ground cinnamon.
