When I’m celebrating something special or just feeling incredibly joyful, I always crave mango sticky rice. Its sweetness is like pure happiness in a bowl!
Simple Mango Sticky Rice
Ingredients
- 1 cup glutinous rice
- 1 cup coconut milk
- 1/2 cup sugar
- 1/2 tsp salt
- 2 ripe mangoes
- Sesame seeds for garnish
Steps
- Rinse glutinous rice thoroughly, then soak for at least 1 hour.
- Steam the soaked rice for 20-25 minutes until cooked.
- In a saucepan, heat coconut milk, sugar, and salt until sugar dissolves. Set aside 1/4 cup of this mixture for topping.
- Pour the remaining coconut milk mixture over the hot steamed rice and stir well. Let it sit for 15 minutes to absorb.
- Slice mangoes and serve with the sticky rice, drizzled with the reserved coconut sauce and sprinkled with sesame seeds.
