There’s nothing quite like a leisurely Sunday afternoon, a good book, and a delicious plate of homemade paella. It’s my little slice of heaven.

Simple Chicken & Chorizo Paella

45 minutes • Medium

Ingredients

  • 1.5 cups Arborio rice
  • 2 chicken thighs, diced
  • 100g chorizo, sliced
  • Pinch of saffron threads
  • 1/2 cup frozen peas
  • 4 cups chicken broth

Steps

  1. Sauté chicken and chorizo in a large pan until browned.
  2. Add rice and saffron, stirring for 2 minutes.
  3. Pour in warm chicken broth and peas, bring to a simmer.
  4. Cook uncovered for 20 minutes until liquid is absorbed, then cover and rest for 5 minutes before serving.
