Simple Chicken & Chorizo Paella
Ingredients
- 1.5 cups Arborio rice
- 2 chicken thighs, diced
- 100g chorizo, sliced
- Pinch of saffron threads
- 1/2 cup frozen peas
- 4 cups chicken broth
Steps
- Sauté chicken and chorizo in a large pan until browned.
- Add rice and saffron, stirring for 2 minutes.
- Pour in warm chicken broth and peas, bring to a simmer.
- Cook uncovered for 20 minutes until liquid is absorbed, then cover and rest for 5 minutes before serving.
