It’s been a tough week, and all I crave is something sweet and comforting. A warm bowl of arroz con leche, just like my abuela used to make, is exactly what I need.

Creamy Spanish Rice Pudding

45 minutes • Easy

Ingredients

  • 1 cup short-grain rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1 cinnamon stick
  • Lemon peel from 1/2 lemon
  • Pinch of salt

Steps

  1. Combine rice, milk, sugar, cinnamon stick, lemon peel, and salt in a saucepan. Bring to a boil, then reduce heat to low.
  2. Simmer uncovered for 30-40 minutes, stirring frequently, until rice is tender and mixture is creamy.
  3. Remove cinnamon stick and lemon peel before serving warm or chilled. Garnish with a sprinkle of cinnamon if desired.
