When I’m feeling adventurous, I love to whip up a fiery Thai green curry! The complex flavors and vibrant spices always excite my palate and make me feel like I’m traveling.

Quick Thai Green Curry with Chicken

Ingredients

  • 1 tbsp cooking oil
  • 1 can (13.5 oz) coconut milk
  • 2-3 tbsp green curry paste
  • 1 lb boneless, skinless chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 cup bamboo shoots, sliced
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • Fresh basil leaves for garnish

Steps

  1. 1. Heat oil in a large pan or wok. Add green curry paste and stir-fry for 1 minute until fragrant.
  2. 2. Add sliced chicken and cook until no longer pink. Stir in coconut milk, fish sauce, and brown sugar. Bring to a simmer.
  3. 3. Add bell pepper and bamboo shoots. Simmer for 5-7 minutes, until vegetables are tender-crisp.
  4. 4. Serve hot over jasmine rice, garnished with fresh basil leaves.
