Quick Thai Green Curry with Chicken
Ingredients
- 1 tbsp cooking oil
- 1 can (13.5 oz) coconut milk
- 2-3 tbsp green curry paste
- 1 lb boneless, skinless chicken breast, sliced
- 1 red bell pepper, sliced
- 1 cup bamboo shoots, sliced
- 1 tbsp fish sauce
- 1 tsp brown sugar
- Fresh basil leaves for garnish
Steps
- 1. Heat oil in a large pan or wok. Add green curry paste and stir-fry for 1 minute until fragrant.
- 2. Add sliced chicken and cook until no longer pink. Stir in coconut milk, fish sauce, and brown sugar. Bring to a simmer.
- 3. Add bell pepper and bamboo shoots. Simmer for 5-7 minutes, until vegetables are tender-crisp.
- 4. Serve hot over jasmine rice, garnished with fresh basil leaves.
