Had a really productive morning and now I need a quick, healthy lunch to keep me going. A speedy chicken stir-fry always does the trick!

Speedy Chicken Stir-fry

Ingredients

  • Chicken breast
  • Mixed stir-fry vegetables
  • Soy sauce
  • Fresh ginger
  • Garlic
  • Cooked rice

Steps

  1. Slice chicken breast into thin strips. Mince fresh ginger and garlic.
  2. Heat a wok or large skillet with a little oil over high heat. Stir-fry chicken until cooked through, then remove.
  3. Add mixed vegetables to the wok and stir-fry for 3-5 minutes until crisp-tender. Add ginger and garlic and cook for 1 minute more.
  4. Return chicken to the wok, pour in soy sauce, and toss to combine. Serve immediately over cooked rice.
