Speedy Chicken Stir-fry
Ingredients
- Chicken breast
- Mixed stir-fry vegetables
- Soy sauce
- Fresh ginger
- Garlic
- Cooked rice
Steps
- Slice chicken breast into thin strips. Mince fresh ginger and garlic.
- Heat a wok or large skillet with a little oil over high heat. Stir-fry chicken until cooked through, then remove.
- Add mixed vegetables to the wok and stir-fry for 3-5 minutes until crisp-tender. Add ginger and garlic and cook for 1 minute more.
- Return chicken to the wok, pour in soy sauce, and toss to combine. Serve immediately over cooked rice.
