When I’m trying to unwind on a Friday evening, there’s nothing quite like traditional fish and chips. It’s my go-to for a truly relaxed night in.
Crispy Baked Fish and Chips
Ingredients
- 2 large potatoes, cut into fries
- 1 tbsp olive oil
- 2 cod fillets
- 1/2 cup breadcrumbs
- 1 large egg, beaten
- Salt and pepper to taste
Steps
- Preheat oven to 400°F (200°C). Toss potatoes with olive oil, salt, and pepper. Bake for 30 minutes, flipping halfway.
- Dip cod fillets in beaten egg, then coat with breadcrumbs, salt, and pepper.
- Place fish on a separate baking sheet. Bake alongside chips for the last 15-20 minutes, or until fish is flaky.
- Serve hot with lemon wedges or tartar sauce.
