When I’m feeling truly happy and want a taste of home, Shepherd’s Pie is my go-to. It’s such a comforting, hearty meal that always brings a smile to my face. Reminds me of family dinners and good times.

Classic Shepherd's Pie

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground lamb or beef
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 cup peas
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 2 lbs potatoes, mashed
  • 1/4 cup milk
  • 2 tbsp butter

Steps

  1. Preheat oven to 375°F (190°C). Sauté onion, then brown ground meat in olive oil. Drain fat.
  2. Stir in carrot, peas, beef broth, and tomato paste. Simmer for 10 minutes.
  3. Combine mashed potatoes with milk and butter. Season well.
  4. Spoon meat mixture into a baking dish, then top with mashed potatoes. Fluff with a fork.
  5. Bake for 25-30 minutes until golden brown and bubbly.
