Hearty Shepherd's Pie

Ingredients

  • 1 lb ground lamb or beef
  • 1 onion, chopped
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup beef broth
  • 2 lbs potatoes, peeled and mashed
  • 2 tablespoons butter

Steps

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown ground meat and onion. Drain fat. Stir in mixed vegetables and beef broth. Simmer for 10 minutes.
  3. Spoon meat mixture into an oven-safe dish. Top evenly with mashed potatoes.
  4. Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
