Hearty Shepherd's Pie
Ingredients
- 1 lb ground lamb or beef
- 1 onion, chopped
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 cup beef broth
- 2 lbs potatoes, peeled and mashed
- 2 tablespoons butter
Steps
- Preheat oven to 375°F (190°C).
- In a large skillet, brown ground meat and onion. Drain fat. Stir in mixed vegetables and beef broth. Simmer for 10 minutes.
- Spoon meat mixture into an oven-safe dish. Top evenly with mashed potatoes.
